Ingredients

  • 1 ½ cups BonaOrganic white rice
  • 2 tablespoon sesame oil
  • 2 carrots, pealed and cut into batons
  • 150g snow peas, trimmed and roughly chopped
  • 4 leaves cabbage or pak choi, roughly chopped
  • 2 eggs, beaten (Optional)
  • 2 tablespoon light soy sauce

Method

Our vegetable fried rice is easy to cook and the ingredients can be found in any supermarket as well.

1. Cook the rice using the instructions on the packet, remove from the heat, spoon into a colander. Refresh rice in cold water, set aside in colander to drain really well. Refrigerate till cold.

2. Heat the oil in a large wok over a high heat until smoking then add the cooked rice.

3. Stir briefly to heat the rice though then add the carrots, snow peas, water chestnuts, spring onions and cabbage.

4. Continue cooking, stirring all the time, for 2 minutes then add the beaten eggs and stir through until the eggs have set. Add the soy sauce and serve immediately.

5. Serve it while hot.

Cooking Tips

For better result, put the rice on a baking sheet and refrigerate it, uncovered, for 8 to 24 hours, until it is dry enough for you to gently crumble in your hands. Midway through, turn the rice to ensure even drying. Before cooking, return the rice to room temperature.
